Wonton taco with confit pheasant

Wonton taco with confit pheasant, marinated red pointed cabbage and ponzu gel.Crispy wonton tacos filled with slow-cooked confit pheasant, mixed with pangang sauce. Finished with fresh-sweet, Asian-marinated red pointed cabbage and a powerful ponzu gel.

Preparation

  1. Put the duck fat, sunflower oil, thyme, rosemary, garlic and the brined pheasant thigh meat in a pan.
  2. Cook the meat for about 2 hours at low temperature, until it is soft and tender.
  3. Remove the meat from the fat and shred it finely.
  4. Mix the shredded meat with pangang sauce. Use 175 grams of pangang sauce for 300 grams of shredded pheasant meat.

  1. Mix the water with salt, sugar, clove, rosemary, thyme, garlic and bay leaf.
  2. Place the pheasant thigh meat in the brine.
  3. Let the meat brine overnight in the refrigerator.
  4. Remove the meat from the brine and pat dry thoroughly.

  1. Mix the ponzu, water, ginger syrup, mirin, chicken stock, and agar agar in a pan.
  2. Bring to a boil while stirring and let it boil briefly so the agar agar activates properly.
  3. Pour the mixture into a container and let it set completely in the fridge.
  4. Blend the set mixture until smooth to make a gel.
  5. Put the ponzu gel in a squeeze bottle or piping bag.

  1. Finely slice the red pointed cabbage.
  2. Mix sushi vinegar, olive oil, mirin, yuzu, sesame oil, furikake, soy sauce, sweet soy sauce, and ginger syrup to make a marinade.
  3. Mix the red pointed cabbage with the marinade.
  4. Season with salt and pepper.
  5. Let the cabbage marinate for at least 30 minutes so the flavors can infuse well.

  1. Fry the wonton wrappers crispy in the shape of a taco.
  2. Drain on kitchen paper and keep dry until use.
  3. Fill the crispy wonton taco with the confit pheasant.
  4. Spread the marinated red pointed cabbage over the meat.
  5. Pipe dots of ponzu gel on and between the filling.
  6. Optionally finish with furikake, finely chopped herbs, or shiso.
  7. Serve immediately so the wonton taco stays crispy.
